The Hoegaarden Mint Balls

A Hoegaard schoolmaster kept the recipe based on butter, sugar, honey and mint oil. Benny Swinnen continues the tradition with a recipe in which the honey is replaced by glucose. The spheres get their old-fashioned shape in a 19th century sugar roller. After complete cooling, they are broken and packed.
